- A student-run Italian restaurant, Trattoria Caldo, has been opened at Southwest Minnesota State University as part of its Culinology program. SMSU Culinology and Hospitality Management students manage every aspect of the restaurant, from the front of the house to the back. It is open on Wednesday evenings through the spring semester. The menu consists of appetizers, salads, entrees, pasta, sandwiches, pizza and desserts. The Italian restaurant replaces the former Green Bistro. “We thought that Marshall would welcome a good Italian restaurant,” said Associate Professor of Culinology Kurt Struwe.
